The owner and chef, Jay, after 20 years of experience in making Japanese cuisine, opened this shop featuring Japanese style and local culture, arriving right out of market cuisine. Jay visits the local fish market in the early hours, collaborating with selected fish suppliers for the best quality of fish. Insisting upon fish from set nets or hand fishing, Jay has a range of undomesticated fish and shellfish in his kitchen: namely, red sea bream, cobia, garfish, greater amberjack, squid, skipper, shrimp, sand snapper, scallop, and yellowfin tuna. As such, an always unpredictable menu awaits.
